Ingredients

1 pound Ground Beef

16 oz. Velveeta, cubed

4 oz. Monterrey Jack Cheese, freshly shredded

14 1/2 oz. Canned Diced Tomatoes with Green Chiles

1 Tablespoon Olive Oil

Salt, to taste

Black Pepper, to taste

1/2 Teaspoon Chili Powder

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Onion Powder

1/2 Teaspoon Paprika

Chopped Tomatoes, for garnish

Cilantro, for garnish

Directions

Heat olive oil in a large skillet or saucepan, over medium heat.
Add in your beef and break it apart with a wooden spoon or meat masher.
Mix in chili powder, garlic powder, onion powder, and paprika, and cook until no longer pink.
Add in the tomatoes (juices) Velveeta, and Monterey Jack.
Reduce the heat to low and cook, stirring occasionally, for about 5-10 minutes, or until the cheese is fully melted.
Top with extra tomatoes and cilantro, and serve with tortilla chips.
